Sweet Chilli Salmon is wonderfully light yet full of flavour. Serve  hot with noodles or Cous Cous or Egg Fried Rice, or cold in a pasta salad. 

Choose Skin on Salmon Fillets (like the picture above) 

Ingredients for Sweet Chilli Salmon
  • One salmon fillet per person 
  • Sweet Chilli Sauce
  • Light Sprinkling of Chilli Flakes (optional)
  • A sheet of tin foil to line the tray
  • Freshly Ground Sea Salt and Freshly Ground Black Pepper
Method

Line a baking tray with a sheet of Aluminium Foil

Put the salmon skin side down on the baking sheet

Sprinkle with salt and pepper and chilli if using

Drizzle with Sweet Chilli Sauce

Bake in the oven for about 15-20 mins. When it is cooked it should be slightly golden on top. When you press the fish with a fork it should flake easily and be a pastel pink colour throughout. Ensure it is pink, opaque and piping hot 

To Serve

Serve with either noodles and salad, Cous Cous or Egg Fried Rice
