Chicken Salad Sandwich Recipe
If you have any leftover chicken from a roast chicken dinner, or some leftover cooked chicken thighs or legs you can make a tasty roast chicken salad sandwich. This is perfect with a little salad cream and a cup of tea.
You could toast the bread before assembling the salad if you like, but this is absolutely optional.
If you haven’t got any leftover roast chicken, you could always roast some chicken thighs or legs and let them cool. I like having some cooked chicken in my fridge as it is versatile and can be turned into a range of things, depending what you’re in the mood for. You can alter the salad ingredients to suit what you have available or what you fancy putting in it. It isn’t set in stone! I sometimes add a couple of slices of crispy bacon to jazz things up a bit.
Ingredients for roast chicken salad sandwich recipe.
- Cooked chicken, cooled and thinly sliced
- Lettuce – iceberg works well, as does romaine, or little gem. Wash it and pat it dry unless you have one of those 1980s salad spinners. It needs to be dryish when you add it to the sandwich, or it will get soggy.
- Thinly sliced tomato
- Thinly sliced cucumber
- Spring onions peeled and thinly sliced (optional) or a little thinly sliced red onion (also optional)
- Crispy cooked bacon (optional)
- Salted butter softened
- Salt and pepper to taste
- A good quality bread
- A little salad cream or mayo to taste (Optional)
Method for roast chicken salad sandwich
- If toasting the bread, toast it now.
- Butter the bread/ toast with the softened butter,
- Thinly slice the chicken and spread it over the buttered bread
- Add the rest of the ingredients to taste
- Top with the second slice of bread and squash down slightly to ensure the sandwich ends up sticking together
To serve
Serve with some coleslaw and a salad garnish and some potato crisps
