Orange Marmalade Pudding with Orange Sauce

This sticky orange marmalade pudding and orange sauce is simply the best pudding. It is tangy and sweet and nicely complimented with the orange sauce. If you prefer you could serve it with custard, cream or ice cream, but the orange sauce just lifts it to another level! 

Ingredients for Orange Marmalade Pudding

  • The grated rind, and juice of one orange
  • 75 g butter or margarine
  • 75 g caster sugar
  • 2 eggs, lightly beaten
  • 75 g  wholemeal self raising flour
  • 2 tbsp orange marmalade lightly beaten
  • 2 tbsp milk (you may not need all the milk)

Ingredients for the Orange Sauce

  • 25 g cornflour
  • 25 g sugar
  • 3/4 pint milk
  • 1 grated orange rind

Method for Orange Marmalade Pudding

  • Cream butter and sugar together until light and fluffy
  • Add beaten egg and gently beat until smooth
  • Add everything else from pudding ingredients apart from flour
  • Slowly add flour
  • Put in greased microwavable bowl and microwave for 3 mins initially then in 30 second increments until it is completely cooked through.
  • Alternatively put in a greased pudding basin with a greased proof paper cover, tied up with string and steam for 2 hours over a pan of hot water

Method for Orange Sauce

  • Put cornflour in a jug
  • In a pan gently heat the sugar and the milk, stirring occasionally.
  • Add a little cold milk into the cornflour
  • Add orange rind and stir
  • When milk boils tip it over the cornflour and orange rind mix and stir well. Serve with the orange pudding.

Cooking Tip:

If the sauce looks too thick, let it down with more cold milk. If it looks not thick enough tip it all back in the pan and gently heat until it thickens up, stirring all the time
