 Easy American Pancakes Recipe

If you want a tasty but rather indulgent breakfast or brunch idea, this fluffy American pancake recipe is just the ticket! Serve the pancakes with lashings of crispy streaky bacon and maple syrup, or add a dusting of icing sugar and your favourite fresh fruit and honey if you’re feeling more virtuous!

Cooking Tip :  Pancake batter needs to be quite thick, so add the milk slowly until you get a nice thick but still runny consistency! If you get any lumps whisk them out using a whisk or a fork.

Ingredients for Easy American Pancakes Recipe

You will need:

  • 5 heaped tablespoons of plain flour
  • A generous pinch of salt
  • 1 teaspoonful of baking powder
  • 2 tablespoons of either caster sugar OR soft brown sugar
  • 1 large egg (or two smaller ones)
  • 1 tablespoonful of melted butter 
  • Milk to mix into a thick but still runny batter, approx 130 ml
  • 1 teaspoonful of vanilla extract or to taste.
  • Extra butter or olive oil to cook the American Pancakes

Method for American Pancakes Recipe

  • In a large jug or mixing bowl, add the flour, baking powder, sugar and salt and mix well until combined.
  • If you have a sieve, you could sift the flour first, but modern flour comes pre-sifted, so it should be fine without!
  • Create a well (a circular dip!)  in the flour at the bottom of the bowl, then add the egg and a little of the milk, and mix well until it forms a thick paste.
  • Add the melted butter and the vanilla extract and whisk with a fork or whisk. Slowly add the milk until it looks thick but still runny.

Cooking Tip

If you find that it looks too runny you can add a little extra flour and if it looks too thick add a little extra milk until it looks about right.

  • Next, put a non-stick frying pan on the hob over a medium heat and add a little butter or olive oil to the pan.
  • When the pan is medium hot (but not smoking hot!) add a ladle of the pancake batter and cook on each side for 3 or 4 minutes or until the pancake looks golden brown (but not black) and the pancake is cooked through.
  • The tip here is to look at the pancakes and adjust the timing and temperature so they end up nicely browned and crispy on the outside, whilst being fully cooked and fluffy within.
  • Lift the pancake onto a plate and keep warm. Cook the rest of the batter off by repeating the cooking process until it is all gone.

How to serve American Pancakes

Serve with crispy streaky bacon and maple syrup, or with fresh fruit and a dollop of natural yoghurt, or with crispy chicken strips if you’re feeling adventurous.

 About buying maple syrup!

If you’re buying maple syrup, it is worth investing in a bottle of the proper stuff, the flavoured golden syrups you can buy just don’t hit the same spot in the same way!
