 Coronation Chicken

This is a great way to use up leftover roast chicken to create a tasty sandwich filling. Or try spooning it over a hot buttered jacket potato for a more substantial lunch.

If you don’t have any mango chutney you can leave it out, but adding some gives the recipe a little extra zing.

It will keep for up to 3 days in the fridge if you keep it in a lidded container.

Ingredients for coronation chicken:

  • Left over roast chicken either ripped into shreds or diced into even sized pieces.
  • 3 tablespoons of good quality mayo
  • 2- 3 teaspoons of medium curry powder to taste.
  • A sprinkling of sultanas (optional)
  • Mango chutney to taste.
  • A handful of freshly washed and patted dry baby spinach (optional)

Method for coronation chicken

In a mixing bowl mix the curry powder, mayo and mango chutney until a smooth paste.

Add in the chicken and stir well. Add in sultanas if using.

Serve as a sandwich with some freshly washed baby spinach or piled on top of a jacket potato.
