Broccoli Soup

This soup is vegan unless you add chesse or cream to it at the end 🙂 Whilst you can gently wake the vegetables up by sauteeing them in some butter or plant-based alternative, I normally simply put everything into the pan and simmer gently. This recipe is great when you’ve got little time or energy or want to use up bits of broccoli. You can even use the stalk so there’s no wastage.

Ingredients

  • One head of broccoli, chopped into florets (small trees) and the stalk thinly sliced
  • One medium brown onion, peeled and cut into quarters
  • 2 cloves of garlic, peeled and crushed or finely grated if you don’t have a crusher
  • 2 vegetable stock cubes
  • A Shaking of Dried Thyme
  • Freshly ground black pepper 

Method

Throw all the ingredients in the pan with enough water to cover the vegetables

Simmer until soft and then take off the heat and blitz well with a hand blender

If you wish you can add some cheese like blue stilton or mature cheddar and a little double cream if you like (unless you’re vegan, although you can always add some cheeze)
